Harvest Pumpkin Loaf - Recipe
While I'm waiting for the snow to melt from our freak snowstorm this weekend, I thought I would do some baking! I'm the first one to admit I am not a food blogger, so you won't find a ton of fancy photos, but what you will find are some family favourite recipes! This is one I've been baking for years and it's a nice hearty loaf filled with pumpkin, nuts and chocolate chips. My kids fave that they ask for all the time, even now when they no longer live at home but like to stop by and grab a few! I remember baking these in mini loaf pans when the kids were in school so they could take a healthy snack on their way out the door. Hope you enjoy it as much as my family does.
Recipe:
1/2 cup margarine or butter softened
1 cup sugar
2 large eggs
1 cup canned pumpkin
2 cups all purpose flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 cup. chocolate chips
1/2 cup chopped walnuts or pecans.
1. Preheat oven to 350F and grease one loaf pan or 4 mini loaf pans
2. Cream butter and sugar together. Beat in eggs, stir in pumpkin.
3. In a separate bowl combine dry ingredients. Stir into pumpkin mixture until moistened.
4. Spoon into loaf pan and bake 1 hour or until done.
5. Enjoy!
